Snails (cretan style)
In Crete the snails are called "chochli".
1kg snails, rosemary, 1 cup of Felea olive oil, ½ cup red wine vinegar and some salt.
- Soak the snails in water and wash them, after place them in a pot of boiling water and boil for 10 minutes.
- Choose the ones with their heads sticking out, rinse them thorough and put back into boil, in clean water with some salt.
- In a pan with Felea olive oil , put and fry the snails , facing down, after having them drained.
- Add the red wine vinegar, the rosemary and a pinch of salt and leave for a few more minutes so the snails cook. Stir, when they get all the aromas of the stock they are ready to serve.
